A fresh strawberry mousse. Perfect on its own but also great as part of a mousse cake.
- 250gr still frozen strawberries
- 30gr sugar
- 3 sheets gelatin
- 200ml heavy cream
Soak the gelatin sheets in cold water for 5 minutes.
Puree the strawberries with the sugar. Take 3 tablespoons of the strawberry puree and heat this in the microwave until hot but not boiling. Squeeze out the gelatin and dissolve it in the hot strawberry pulp.
Whip up the cream. Don’t start the next step before the cream is whipped, you don’t want the gelatin to set while you’re whipping.
Stir the gelatin strawberry puree into the remaining puree, stirring well. Fold it into the cream.
Scoop into whatever bowl or mould you want before it sets. Leave to set in the fridge. Because of the frozen strawberries this sets quickly.
