Tex-mex Rub

This rub is based on spicy and rich flavours, and is brilliant for meat and poultry, as well as winter vegetables.

Ingredients:

  • 2 tbs salt
  • 2 tbs ground black pepper
  • 2 tbs sweet paprika powder
  • 2 tbs dark muscovado sugar
  • 1/4th tsp chili powder
  • 1 tbs ground cumin
  • 1 tbs dried oregano
  • 1 tbs cacao powder
  • 1 tsp cayenne

Recipe:

Combine all the ingredients. Store in a dry place.
You can use this rub for meat, poultry and vegetables such as red onions, bell peppers and courgettes. Rub the item well, leave to infuse for 30 minutes and then bake the item.
