Tzatziki Pasta Salad (BC)

A very simple dish with tzatziki coated pasta. Very quick to make and great for summer days. You can make tzatziki yourself, which is quite easy (see recipe under sauces or in the BC5 overview) or buy it from the supermarket. The picture shows ricotta cheese on it but I found the texture to not be a great match, so I advise you to leave it out too. I have not included the ricotta in the recipe.

Ingredients:

  • 80gr pasta
  • 60gr peas, frozen
  • 1/3rd cucumber
  • 60gr peas, frozen
  • 80gr tzatziki
  • pinch of salt

Serves 1 as part of the Budget Challenge

Recipe:

Cook the pasta until just done, then add the peas. Immediately drain and rinse under cold water. The peas don’t need to be cooked, just defrosted.

Cut the cucumber in half. Scrape out the middle with a spoon and throw that away, this part would release too much water and turn your pasta dish watery.
Slice the cucumber.

Combine the pasta, peas, cucumber, tzatziki and salt. Stir well.
