Walnut and coffee are a match made in heaven and work great in ice cream as well.
- 175gr sugar
- 2 eggs
- 500ml heavy cream
- 250ml milk
- 1 tbs instant espresso powder
- 150gr walnuts, chopped
Makes approx 1 liter
Combine the eggs and the sugar and mix well. Then add the milk and cream and the espresso powder.
Freeze in an ice cream machine. Just before it is done, add the walnut pieces. You add them in the end to avoid them sinking to the bottom. If using very small pieces, you can add them immediately but mixing it in at the end is more foolproof.
