I had seen these in some of my candy cookbooks – yes I have multiple – and was fascinated by them. It took a trip to France to try them and be hooked! You need pectin to make these, which isn’t readily available where I live, but once I had tried them and fell in love, I ordered some pectin online and got to work.
Ingredients:
- 250gr blueberries – frozen works fine
- 20gr sugar
- 7gr pectin powder
- 150gr sugar
- 65gr honey
Makes about 40
Recipe:
Simmer the blueberries with a teaspoon of water. Once soft, blend with an immersion blender.
Combine the blueberry purée with the small quantity of sugar and pectin in a thick based pan. Bring to a boil and boil for a minute.
Add the remaining sugar and the honey. Heat to 107°C while stirring well.
Spread the fruit on baking paper in a 0.5cm thick slab.
Leave to cool well for several hours, then cut and toss in fine sugar.
