Blackberry Chocolate Cake

This is such an easy cake to make, but it is delicious and can easily become a nice dessert alongside some ice cream.


  • 300gr frozen blackberries, defrosted
  • 50gr cacao powder
  • 80gr boiling water
  • 100gr butter
  • 100gr moist brown sugar
  • pinch of salt
  • 175gr flour
  • 2 tsp baking powder
  • 3 eggs

Serves 10-12


Drain the blackberries and keep both the berries and the juice. If you didn’t prepare, defrost the berries in the microwave.
Combine the cacao powder and boiling water and stir until smooth. Add the butter and blackberry juice.

Combine the sugar, flour, baking powder and salt. Beat this briefly into the acao mixture, then beat in the eggs and beat until smooth.

Divide the batter over a buttered (I also line the base) 23cm round cake tin. Spread the blackberries out over the cake.
Bake for 30 minutes on 180°C.
