Blueberry Cupcakes

These are very lovely, light cupcakes. They are not sweet and have plenty of blueberries.


  • 150gr flour
  • 50gr sugar
  • 1.5 tsp baking powder
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 125ml milk
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 45gr butter, melted
  • 100gr blueberries

Combine the dry ingredients – flour, sugar, baking powder, baking soda and salt. Combine the milk, eggs and vanilla. Add this mixture to the dry ingredients and mix to form a smooth batter. Mix the butter into the batter. Fold the blueberries in.

Divide the batter of 10 muffin cases in a muffin tin. Using an ice cream scoop for this works very well and will create relatively uniform cupcakes.
Bake for 25-30 minutes on 190°C, or until a skewer comes out clean.
