I am no fan of fudge. However, I firmly believe this is the best candy I have made to date. When I brought a box to work, they were so popular I even caught somebody stuffing his pockets when he thought I wasn’t watching!
Ingredients:
- 1 can (400gr) condensed sweetened milk
- 100gr milk
- 150gr sugar
- 150gr maple syrup
- 115gr butter
- 85gr white chocolate
- 150gr chopped pecans
Makes about 75 pieces
Recipe:
Combine the condensed milk, regular milk, sugar, maple syrup and butter in a thick based large saucepan. If you use a regular size saucepan the risk of it bubbling over is significant – trust me, I make the same mistake over and over again.
Heat while stirring to 118°C. The temperature rises slowly and the mixture will get a peanutbutter-like consistency.
Take the fudge off the heat. Stir in the white chocolate. Beat with an electric mixer until the mixture thickens. It takes me approximately 6 minutes but it may take up to 10 minutes.
Add 2/3rd of the chopped pecans for the last minute, when beating starts to become more difficult.
Spread the mixture out over a 25 x 25cm tin lined with baking paper. Push the remaining pecans in the top.
Leave to cool. Cut and hide from the rest of the world!
