This has to be the most popular dish I have ever made. It is often requested for barbecues and picnics, but also for dinner on hot summer days. With only a few ingredients and hardly any prep (boiling the pasta is pretty much it), it happens to also be as easy as it gets.
- 75gr penne or shell pasta
- 60gr smoked salmon
- 1/2 cucumber
- 1/4th red onion
- 2 tbs crème fraiche
- 1 tsp dried dill
Serves 1 as part of the Budget Challenge
Boil the pasta until just done, then rinse under cold water.
Slice the smoked salmon into strips. Cut the cucumber into pieces and slice the onion thinly into half moons.
Combine the pasta, salmon, cucumber and onion.
Combine the crème fraiche, dill and quite some salt and pepper. Just before serving, toss the pasta with the sauce. Don’t add the sauce a few hours in advance, it is absorbed by the pasta and makes the dish drier and less appealing. You can make everything ahead of time, just keep the sauce in a jar. You can make it for lunch if storing in a very well-sealed box immediately, but this can cause the cucumber to let some water go and making the dish watery. It all sounds complicated which it isn’t, just add the dressing just before serving.
