This salsa-like salad is a great accompaniment to many dishes, and works well with just about any kind of meat. The salad is very fresh, perfect for a hot day, and stores really well. This makes it excellent food for a picnic. I also often use this salad to stuff pita breads with, before adding meatballs or shredded lamb.
Ingredients:
- 1 cucumber
- 300gr cherry tomatoes
- 1 red bell pepper
- 1 onion
- 2 spring onions
- 1 tbs olive oil
- 1 tbs lemon juice
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt
Recipe:
Cut the cucumber, tomatoes, bell pepper and onion into small cubes. If you have one of those Nicer-Dicers, that would make the process a lot faster, although it is not difficult to do by hand.
Slice the spring onions thinly.
Combine the chopped vegetables together with the olive oil, lemon juice, basil and oregano, and season to taste with salt. Leave the flavours to mingle for an hour or longer before serving.
Optional: Add a bush of parsley (chopped coarsely) to the salad.
