A very simple side dish to make, but with sweet raisins and nutty pine-nuts.
- 5kg spinach
- Small handful of pine nuts
- Handful of raisins
- 5 tbs olive oil
- Salt & Pepper
Soak the raisins. Toast the pine nuts until golden and aromatic. Be careful, once they start to colour they can burn quickly.
Heat the spinach together with the olive oil and season to taste with salt and pepper. When the spinach has wilted, toss in the raisins and heat through for a minute. Spread the pine nuts over the top before serving.
