I love citrus fruit in a cake, and pistachios and oranges go so well together. The cake is spiced with cinnamon for a warmer flavour.
Ingredients:
- 150gr softened butter
- 75gr sugar
- 130gr flour
- 1.5 tsp baking powder
- 100gr pistachios
- 2 large eggs
- 1 unwaxed orange
- 1 tsp cinnamon
- 25gr honey
Makes a small cake, for 8 slices
Recipe:
Zest the orange finely. Chop the pistachios to medium fine.
Beat together the butter, sugar, flour, baking powder, pistachios, orange zest and cinnamon (everything except the orange juice and honey).
Divide the batter in a buttered cake tin of 18 x 10cm.
Bake for 40 minutes on 180°C or until a wooden skewer comes out clean.
Meanwhile, juice the orange to get 100ml of orange juice. Add the honey.
Simmer the honey and orange juice for 5 minutes to thicken it.
Once the cake comes out of the oven, poke it with a wooden skewer. Brush the orange juice over the cake.
Leave to cool for 15minutes, then take from the tin and leave to cool fully.
