Beetroot in a smoothie? Yup! Beet is actually quite sweet and its earthy flavour pairs well with blackberries. The blackberry, beet and banana flavours are all subtly present. As you can see, the beet, blackberry, banana and Greek yogurt are present in equal proportion, so scaling the quantities up – or down but why would you do that? – is very easy.
- 100gr peeled raw beetroot
- 100gr Greek yogurt
- 100gr frozen blackberries
- 1 banana, frozen (approx 100gr)
- 1 tsp honey
Cut the beet in small pieces. Place the beet and yogurt in an upside down blender or a small chopping attachment of a stick blender. Blend to a puree.
When the beetroot is somewhat smooth, add the banana, blackberries and honey and blend until smooth.
I love this topped with raspberries.
