This Asian inspired cucumber dish is a nice variation on plain salads. The dressing is sweet and sour (for a dietary version, you could omit the honey) and the chili gives it a nice kick.
- 1 cucumber
- 1 red chili pepper
- 1 tsp honey
- 1 tsp garlic oil
- 1 tsp lemon juice
Cut the ends off the cucumber and slice it in half lengthwise. Slice each half into half moons on an angle, so you get longer sections. Remove the seeds from the chili and cut it into thin strips.
Combine the honey, oil and lemon juice. Toss the cucumber and chili with the dressing.
