Steaming fish is an easy and delicious way to eat healthy. You can serve this fish with lemon wedges, but for a more Asian feel, sprinkle a teaspoon of soy sauce over the flesh after you have removed the skin.
- 1 Dorade, whole but innards removed
- 3 lemon slices
- 2 twigs of dill
Remove the scales of the fish by rubbing the back of a blade against the grain over them gently. Run the belly of the fish under cold water to clean the inside.
Prick the inside belly a few times with a knife, to allow the flavours of the lemon and dill to penetrate.
Fill the belly of the fish with the lemon slices and the twigs of dill. Place the fish on some baking paper in a large bamboo steamer and place the steamer on a wok filled with hot water. You do not want the water to touch the steamer.
Bring the water in the wok to the boil and steam for approximately 12-15 minutes, depending on the size of the fish.
