Bacon and pancakes, in one, how does it get better than that? If you do not have wholemeal flour, you can use only all-purpose, but you will lose an excuse to think this is healthy.
- 200gr flour
- 50gr wholemeal flour
- 1/2 tsp baking powder
- pinch of salt
- 10gr sugar
- 2 eggs
- 275ml milk
- 50gr melted butter
- 150gr pancetta cubes or streaky bacon slices
Combine the dry ingredients – flours, baking powder, salt, sugar. Add the eggs and half of the milk and whisk to combine. Add the remaining milk and the butter and whisk to combine well. Add more milk if the batter is too thick.
Heat a baking plate or frying pan on the stove. Bake some bacon with plenty of space inbetween, until starting to brown. Scoop a sauce spoon of the batter on top of the bacon. Bake until the batter is starting to bubble and dry a bit (you want them a bit liquid on top though), then flip them over and bake for half a minute on a high flame, or until the bottom has browned nicely.
Serve warm, with powdered sugar or maple syrup.
