Cranberry Almond Cookies

These large cookies are well filled with dried cranberries, whole almonds and white chocolate chips.


  • 250gr flour
  • 1.5 tsp baking soda
  • pinch of salt
  • 150gr butter
  • 175gr sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 75gr white chocolate chips
  • 100gr dried cranberries
  • 60gr whole almonds

Makes 18-20 large cookies


Combine the flour, baking soda and salt and set aside.
Combine the butter and the sugars and beat until soft and combined well. Then add the egg and vanilla and beat them in. Add the flour mixture, mix everything and then add the chocolate chips, cranberries and almonds.

Use an ice cream scoop to scoop balls of dough on the baking sheet. Flatten them a little bit (not too much).
Bake for 12 minutes on 190°C
